
I did it tonight. 🙂 I cooked my first meal with zero recipe. Just a little of this and a little of that. 🙂 I made….. taco casserole. I know, I know. It’s nothing amazing, but I’m so excited to begin taking my cooking to a new level. Why the sudden change? You guessed it. 🙂 Watching MasterChef and other cooking shows make me want to try to cook a new, more sophisticated level of cooking. Although taco casserole is much less than sophisticated by any means, the concept of taking what I have and deciding to do what I know I can with it and stretch myself to try making new things is what I’m really excited about.

This casserole is just layers of
corn tortillas
taco meat
onions
Rotel chopped tomatoes and jalepenos
cheese
I just did two layers of that plus some “homemade” cream of beef soup
I would normally have used cream of chicken soup, but it’s not gluten-free, so to substitute, I used
1/4c. potato flour
3/4c. milk/ 1/2 & 1/2 (whatever you have… I just don’t like using water)
2 tsp. beef bouillon

nice! You have surpassed me, as I really don’t cook…even for myself. now, baking—that’s a diff story! I love to bake but don’t do it often since it’d just sit around my house and I’d eat it all the time.
But, awesome…and I bet Adam is enjoying all of your creations 🙂 (as long as they don’t burn!)
