Monster Cookies … and More


Well, for some reason today, I am exhausted.  I don’t know what is going on —maybe I’m dehydrated—’cause although I had 7 hrs of sleep last night (10:30-5:30), I’m pretty tired.  I think it’s dehydration (as I chug another glass of water).

On new food news, I ate a Not Dog today. hehe… yeah, if you don’t know what they are, that’s probably ok.  I grew up with them, so I like them, but they’re basically tofu dogs (as opposed to hot dogs).  They have a very unique taste to them, and I can’t say there something I would expect most people to enjoy.  However, they are a healthy alternative to hot dogs and the only way I’ll ever eat tofu.

In other news, I’m sitting here waiting for my monster cookies to finish cooking.  Monster cookies? That’s right. I think they’re called monster cookies, because of what they do to the eater’s health. lol…just check out the ingredients!  Oh, well.  They’re so tasty, and each batch of the recipe makes 3-3 1/2 dozen, so they’re good make-ahead-and-freeze cookies. 🙂  I like that.  (and yes, the recipe is below. 😉 )

I was blessed today with a wonderful gift!  An old friend of mine taped the audio of our Old Testament Survey classes I and II with Abner Chou from The Master’s College back in ’06/’07.  I’m so excited!!  These classes completely altered my view of God, my whole understanding of the purpose of man, and the whole way I lived my life.  Now, about 4 years later, I get to listen to these lessons again and be refreshed by these glorious truths.  What a blessing!

[So, my cookies are done…. I managed to get 50 cookies out of that one batch!  Wonderful! 🙂  I’m super-exciting to have lots of cookies for my hungry man.]

I have some great news to announce!!!!!

I’m starting a new job…. as a Pampered Chef consultant!!! I’m so excited!!  Adam and I have discussed it, and we think it would be a neat opportunity to take this love of food and cooking that I have and turn it into a profitable business that will do more than make us fat (….or maybe just me….he hasn’t gain a pound since we’re married!)  I’ll be working under a local lady, who’s hosted a party for my family and Adam’s multiple times in the past, and I’ll be starting my first shows in the beginning of November!!  SO COOL!!!!!  SO….. if you want to host a show, I would LOVE to come cook for you and with you!! More details to come! 🙂

[Runs off to bread pancake batter for breakfast tomorrow…I want to cut a few minutes time off my breakfast cooking for tomorrow morning at 5:30.]

Monster Cookies

The batter in prep

Beat together:

1/2 c. (1 stick) butter

1 c. sugar

1 1/8 c. brown sugar

1 tsp. vanilla

1 tsp. corn syrup (I used honey)

3 eggs

Add:

1 1/2 c. peanut butter

2 tsp. baking soda

Twelve minutes goes fast!

Stir in:

4 1/2 c. oats (I used gluten-free oats)

1 c. chocolate chips

*Optional: 1 c. chopped nuts

Bake on ungreased sheet at 350° for 12 minutes.

  1. You might be fighting something off (though I hope not). I’ve been feeling tired and thirsty, and it’s because of this cold . . . sometimes even when I don’t have the symptoms, it still makes me tired.

    The cookies look good! Do you have an oatmeal cookie recipe? Those are good too.
