When I first opened the package holding this new, unfamiliar kind of gluten-free pasta, I was very surprised. When I cooked up the pasta, I was even more surprised. I’m excited to share with you why…

Appearance
Pros: This pasta is extremely thin! In fact, this pasta is almost angel-hair thin! This is very uncommon for gluten-free pasta. In fact, I’m often facing the issue of pasta being too thick and chewy, but this pasta, as thin as it is, is highly remnant of traditional, wheat pasta. What a treat!
Cons: The ends of the pasta were bent over as if bagged when still warm. I think this “con” merely adds to my love of this pasta as it is all-natural.
Taste
Pros: Because this pasta was so thin, because this pasta was natural and well-balanced in flavor, I really felt like I was eating traditional pasta! What a joy! Adam is very picky about his pasta, but he really liked it as well! Way to go, Pastaríso!
Cons: I followed the directions on the bag closely, but I felt the pasta was lacking a little flavor. Next time I make it, I will add salt to my water to give it an extra flare that was lacking/
Texture/Moisture
Pros: Because this pasta was so thin, it cooked fast! I was pretty surprised about that as

well. The texture was hearty and natural. I’m happy to say it was a moist pasta that will reheat well but not become chalky.
Cons: I was afraid I would overcook the pasta, because it cooked so fast and because of its overall texture. It absorbed the water so fast that I was afraid it would become mush. I erred on the side of caution…. and undercooked it, so it was a little chewy. That starchy aspect of the noodle is the biggest con, but honesty, the undercooking aspect…. totally my fault!
What I Love
I love thin pasta. Angel-hair is my favorite. However, I said goodbye to that with the gluten-free diet in our home. I’m glad to say I’ve re-kindled this love for thin pasta with the option of Gluten-Free Gourmet’s pasta. 🙂 Wonderful!
What I’d Improve
I think there’s some spices lacking within the overall composition of the pasta dough. Of course, that offers variety to the pasta, but it also results in a little bit of a bland pasta. My biggest critique would be to add some spices to the pasta.
(This way Adam won’t be able to tell as easily if I use cheap spaghetti sauce. 😉 )
