I’ve mentioned before that my mother-in-law gave me a wonderful, homemade gluten-free bread recipe. (You can find it here.) However, as I do food reviews, we have had the opportunity to try some new breads and here’s one of them.

Appearance
Pros: I was so unsure about this bread mix. After all, what can beat

Mom’s homemade bread? However, I was really glad with the appearance of the bread, as it rose well, it held up well to cutting, and it browned to a wonderful, golden color.
Cons: I have to say this much about the appearance of the bread. The directions never told me to cover the bread with tin foil for a portion of the cooking time. I left it uncovered for the first fifteen minutes or so, but since it was getting more golden than it should in that short of time, I covered it for all but the last five minutes of the cooking time. I really think that note should have been added to the instructions in order to avoid a burned top.
The top of the bread sunk just a little; however, not enough to ruin the overall appearance.
Taste
Pros: I have made breakfast sandwiches, barbecue sandwiches, toast, etc with this bread, and … hehe…I’ve even eaten the end pieces and the little pieces left over from slicing this loaf. The taste of this bread is spectacular! It has a sweetness to it that reminds me of challah bread and a versatility that allows for it to be used for all three meals of the day.
Cons: No cons here!
Texture/Moisture
Pros: The worst part of most gluten-free bread is how dry and grainy the bread is. This bread was not! Very moist and fresh, this bread reheats super-well, so that it’s like eating it fresh again! Recently, I pulled a slicer from the freezer, nuked it in the microwave for thirty seconds, and enjoyed a warm, sweet, moist piece of bread just like it was the day I baked it!
Cons: Adam’s only complaint with this bread is that it’s a little heavy. The moisture in the bread definitely contributes to that aspect, but if I had to choose, I’d take heavy, moist bread any day of the week!
What I Love

I love the flavor of this bread! It’s so much more than a white sandwich bread for a ham and cheese sandwich. It’s the inspiration for a grilled barbecue pork sandwich with homemade barbecue sauce. It’s the base for some wonderful French toast, and it’s the perfect, warm buttered bread to go along with my cup of tea.
What I’d Improve
I’d definitely say that improving the instructions for the baking process would help the more unpracticed bread-baker with the process and with ensuring the golden top with this bread should have. Other than that, great job Pamela’s!!
