Adam and I were talking meals today. I’ve been slacking in the baking department–48+hrs at work will do that to a woman. My very understanding husband made a request for a certain meal, but I was out of homemade gluten-free bread. Oops.
Instead of embarking on a long process of making my own rice bread flour mix to make my own homemade loaves of bread (See recipe here), I decided to try a mix I’d been sent for such a time as this.

Appearance
Pros: As far as gluten-free breads go, this bread looks right. 🙂 It’s airy and light and reminds me of “real” white bread for sandwiches! Whoohoo!
Cons: The finished product was wonderful, but I was disappointed that the bread didn’t come out of the pan easily (probably my fault although I greased and floured the whole pan). I was disappointed that the product didn’t rise out of the pan–just to the top of it.
Also, the packet includes the directions for a few different kinds of bread as well as some rolls. It also includes a yeast packet. However, both of these are inside the bag, deep within the flour, so you have to pour the flour out to find the directions, which are all covered in mix. I think thats poor designing.
Taste
Pros: I have to say this bread was quite tasty. I used some jam to enjoy the end piece which Adam doesn’t normally like, and even it was soft and tasty. I gave some to Adam, and he didn’t even seem to notice that it was an end! Tasty and light–perfect for sandwiches!!
Cons: I can’t say that I have any cons here! I like the taste of this bread a lot!
Moisture/Texture
Pros: I really love the texture of this bread. From the first bite, it’s a smooth texture with not too much chew and just enough heartiness to hold the perfect sandwich together!
Cons: Follow the directions and cover after 15 minutes of baking, and you’ll find this bread maintains the best moisture/texture.
What I Love
I love the simplicity of this bread mix. I could have spent a long time making bread today, but instead this mix, complete with yeast and xantham gum inside, got me a full loaf of bread in a short amount of time. I’m thankful for this mix and for a company that knows how to produce a great quality bread.
What I’d Improve
I’d improve packaging for sure. The yeast and directions buried in mix is a deterrent to using this brand.
