After a failure at making some strawberry muffins today, I decided that a chocolate cake was a great way to fix the “problem”. So, I went to my pantry and decided it was time to review another product.

Appearance
Pros: I was really impressed with the look of this batter. As I’ve mentioned before, I can tell a lot about a cake or product by how the batter looks. This cake is no different. I even tasted it, and it was a tasty, smooth mixture.
Cons: I can’t say there was a con here. It rose nicely, it cooked perfectly throughout, and I’m really impressed.
Taste
Pros: It was chocolate-y (is that a word?) and rich, but not so rich that a rich frosting like I added on top was too much. I am happy to say that it is not even that bad for you?? It’s only 180 calories per slice (of course, the frosting made it worse…oops..lol).
Cons: The only con I have with this product is that with it was so good, it was a rather tempting for someone even without very little sweet tooth to get addicted. And this is a con because….? Eating a ton of cake is probably (okay, definitely) not very good for me. Oops.
Moisture/Texture
Pros: I have to say I’m very happy with how moist this cake is. I could tell when I sliced it. I scooped up a piece and the moisture was just like any other, “real” cake! The texture of the cake is smooth, just like the batter. Although it was moist at first, I was afraid that this cake, like so many gluten-free options, would dry out as the days went on. However, this cake did not! It stayed so moist that even 4 days later, it was still moist enough to serve to a non-gluten-free eater, and they wouldn’t know the difference!
Cons: None!
What I Love
I love that this cake was simple, easy to make, and cooked like a charge exactly as the box directions called. It’s not often that a gluten-free mix works as perfectly and as easily as a
“regular” mix, and this one did just that!
What I’d Improve
This is definitely The Really Good Food Company’s best box mix (that I’ve tasted). I think whatever they did here should be translated over into some of their other mixes (like the yellow cake mix), so we always have a great mix to use!
